Sneak Peak of What’s To Come..

Summer is officially over, I’ll be cooking a lot in the Winter since I hibernate. I cooked a real meal for the first time in a couple of weeks and it was too good not to share.

I don’t really use exact measurements, it’s all guesstimates .

Pesto Chicken Pasta

Honey Mustard
Extra Virgin Olive Oil

-Mix all above ingredients in a small bowl
-Boil noodles until al dente or cooked to your desire 
-Once noodles are cooked, add the sauce from the small bowl

Boneless Skinless Chicken Breast
Spelt Bread Crumbs
Montreal Chicken Spice
Garlic Spice

-Combine all above ingredients in a bowl and coat chicken
-Cook chicken in a pan (I used cast iron) at medium heat to cook the outer edges of the chicken|
-Preheat oven to 350 degrees and cook for 10 minutes (or until no longer pink-cooked and still juice)

Cherry Tomatoes

-Sauté onions and tomatoes together while the chicken is baking in the oven (same pan used to sear the chicken)
-Once the chicken is done, cut into small pieces and add to the pan with the onions and tomatoes
-Add the sauced noodles to the pan and coat the rest of the ingredients

Serve hot topped with parmesan cheese and voila
